Nikki’s Breakfast Cake

Christmas Eve Dinner



Cyndi’s Pumpkin Cake

Step 1:
1 box yellow cake mix (reserve 3/4 c. for topping)
1/2 c. melted butter
1 egg (slightly beaten)
Blend and put in a greased and floured 9″ x 13″ pan

Step 2:
1 lg. can pumpkin
3 eggs
1/2 c. brown sugar
1/2 c. white sugar
2/3 c. evaporated milk
1 1/2 tsp. cinnamon
Pour pumpkin mixture over the cake in pan.

Step 3:
To the reserved cake mix add
1/2 c. sugar
1/4 c. soft butter (mix with fork or work in with fingers to make crumbly).
Sprinkle this on top of pumpkin mixture.
Top with 1/2 c. chopped nuts if desired.
Bake at 350′ for 55 minutes.
Serve with whipped cream.
